Palócleves is one of the most classic soups in Hungarian cuisine, evoking the Palóc traditions. The base of the soup is a rich broth, prepared with vegetables, smoked meat, and special, spicy seasonings. The characteristic of Palócleves is that although its base is simple, the smoked meats, bacon, and spices inside give it a truly tantalizing flavor. Its special feature lies in the fact that the combination of spices and meat results in such a perfect harmony that it refreshes even on the coldest days.
Finely chop the onion and garlic, then sauté them in oil until softened.
Add the diced pork and brown on all sides.
Sprinkle with Hungarian sweet paprika, salt, and pepper. Add the diced potatoes and green beans.
Pour in enough water to cover the ingredients, and simmer until the vegetables and meat are tender.
In a small bowl, whisk together the sour cream and flour. Gradually whisk the mixture into the soup and cook for another 5 minutes to thicken.
Before serving, garnish with fresh dill.
