Rinse the fish fillets under cold water, then pat them dry with paper towels. Season both sides with salt and pepper.
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the fish and cook for 4-5 minutes on one side, until golden brown.
Flip the fish and cook for another 3-4 minutes, or until cooked through. Once done, set aside and keep warm.
In the same skillet, melt the butter. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
Add the fresh spinach to the skillet and stir constantly for 3-4 minutes, until wilted. Season with salt and pepper, and drizzle with a little lemon juice.
To serve, place the spinach on a plate, top with the pan-fried fish, and garnish with fresh lemon wedges.
