Rinse the salmon fillets and pat them dry. Season both sides with salt and pepper.
Heat half of the olive oil in a skillet over medium heat. Sear the salmon for 4-5 minutes per side, or until golden brown and cooked through.
While the salmon is cooking, wash the spinach and remove any thick stems. Mince the garlic.
In another skillet, melt the butter with the remaining olive oil over medium heat. Sauté the garlic until fragrant, being careful not to burn it.
Add the spinach to the skillet with the garlic butter and season lightly with salt. Sauté until the leaves wilt, about 3-4 minutes.
Serve the pan-seared salmon with the garlic spinach. Squeeze fresh lemon juice over the top to enhance the flavors.
