Trim the beef and cut it into even slices. Season both sides with salt and pepper.
Heat the olive oil in a grill pan over medium-high heat. Add the beef slices.
Cook the beef for 3-4 minutes per side, depending on your desired level of doneness (medium-rare or medium).
Add the butter, crushed garlic cloves, and rosemary sprigs to the pan. Baste the beef with the pan juices while cooking.
Remove the beef from the pan and let it rest for 5 minutes to allow the juices to redistribute.
Serve the pan-seared steak with a fresh salad, roasted vegetables, or mashed potatoes.
