Wash the papaya, peel it, cut it in half, remove the seeds, and slice it into smaller pieces. Tip: Use a sharp knife to make the papaya easier to cut.
In a medium saucepan, pour the apple cider, add the honey, cinnamon stick, and cloves. Stir until the honey is completely dissolved.
Add the papaya pieces to the saucepan and gently heat the drink over medium heat. Tip: Do not boil, to keep the papaya fresh in taste and color.
Add 2 tablespoons of freshly squeezed lemon juice, which will add a slight tartness to the drink.
Stir the cider thoroughly and let it sit off the heat for 5 minutes to allow the flavors to meld.
Before serving, strain the drink, and you can place the papaya pieces in the glasses as decoration. Garnish with fresh mint.
