200 ml Water
120 g Granulated sugar
2 tbsp Fresh lime juice
5 Mint leaves (optional)

    Peel the papaya, remove the seeds, then cut it into smaller pieces and blend in a blender until completely smooth.

    In a medium saucepan, combine the water and sugar, then heat over medium heat until the sugar is completely dissolved. This should take about 5 minutes.

    Let the sugar syrup cool, then stir in the papaya puree and lime juice.

    Pour the mixture into a shallow dish and place in the freezer.

    Every 30 minutes, scrape the sorbet with a fork to create an icy texture. Repeat this process 3-4 times until it is completely frozen.
