Freshly made Indian paratha flatbread served

Paratha (Indian Stuffed Flatbread)

Paratha is one of the most well-known Indian flatbreads, prepared with various fillings. The most popular version is 'aloo paratha', which is dough filled with potatoes and spices. Originally from the Punjabi cuisine of North India, it is now widespread throughout the country. Paratha is a rich, filling dish that is often eaten for breakfast or as a main course, accompanied by yogurt, chutney, or pickle. Fried in ghee, it is particularly delicious and fragrant, and its layered, soft dough makes every bite a unique experience.

    Preparation Steps

    1

In a large bowl, combine the whole wheat flour and salt. Gradually add the water, mixing continuously, then knead until smooth.

    2

Cover the dough with a kitchen towel and let it rest for 20 minutes.

    3

In another bowl, mix together the cooked, mashed potato with the red onion, green chili (if using), ground cumin, and fresh cilantro.

    4

Divide the dough into 6 equal portions and roll them out into circles about 6 inches in diameter.

    5

Place a tablespoon of filling in the center of each dough circle, then fold and pinch the edges to seal in the filling.

    6

Gently roll out the stuffed dough again to form a circular paratha.

    7

Heat a skillet over medium heat and grease it with a little ghee or olive oil.

    8

Cook the paratha for about 1-2 minutes on one side until golden brown spots appear, then flip and cook for another minute.

    9

Serve fresh and warm, accompanied by yogurt or chutney.
