400 g Whole wheat flour
200 ml Water
5 g Salt
20 ml Oil or ghee (for the dough)
300 g Potatoes (cooked and mashed)
50 g Green onions (chopped)
10 g Spices (cumin, coriander, chili, turmeric)
50 ml Oil or ghee (for frying)

    Preparation Steps

    In a large bowl, combine the flour and salt. Add the water and oil, and knead until you have a smooth, pliable dough.

    Cover the dough with a kitchen towel and let it rest for 30 minutes.

    Meanwhile, prepare the filling: combine the cooked, mashed potatoes, green onions, and spices.

    Divide the dough into 8 equal portions and shape them into small balls.

    Roll out one dough ball into a disc about 4 inches (10 cm) in diameter. Place a spoonful of filling in the center.

    Bring the edges of the dough together to enclose the filling, then gently roll it out again into a flatbread about 6-7 inches (15-18 cm) in diameter.

    Heat a skillet over medium heat, then grease it with a little oil or ghee.

    Place the paratha in the skillet and cook for 2-3 minutes on one side, until golden brown spots appear.

    Flip and cook for another 2 minutes on the other side, adding a little more oil or ghee while cooking.
