Wash the passion fruit, then cut in half and scoop out the pulp. Tip: Use a bowl to collect the pulp to avoid wasting any of the juice.
In a medium saucepan, pour in the apple cider, add the honey, cinnamon stick, and cloves. Stir until the honey is completely dissolved.
Add the passion fruit pulp to the saucepan and gently warm the drink over medium heat. Tip: Do not boil, to preserve the fresh flavour and texture of the passion fruit.
Add 2 tablespoons of freshly squeezed lemon juice, which will lend a refreshing tang to the drink.
Stir the cider well and let it steep for 5 minutes off the heat to allow the flavours to meld.
Before serving, strain the drink, and you can place some of the passion fruit pulp in the glasses as a garnish. Garnish with fresh mint.
