250 ml Passion fruit pulp
200 ml Water
120 g Granulated sugar
2 tbsp Fresh lemon juice
5 Mint leaves (optional)

    Halve the passion fruits, scoop out the pulp, and press it through a sieve to remove the seeds.

    In a medium saucepan, combine the water and sugar, and heat over medium heat until the sugar is completely dissolved. This should take about 5 minutes.

    Let the sugar syrup cool, then stir in the passion fruit pulp and lemon juice.

    Pour the mixture into a shallow dish and place it in the freezer.

    Every 30 minutes, scrape the sorbet with a fork to create an icy texture. Repeat this process 3-4 times until completely frozen.

    Before serving, let the sorbet stand at room temperature for 5 minutes to make it easier to scoop. Garnish with fresh mint leaves and passion fruit seeds.
