Bring a pot of water to a boil, then add the frozen peas. Cook for about 5 minutes, or until tender.
Drain the peas and return them to the pot. Add the butter, milk, salt, pepper, and nutmeg.
Use an immersion blender or food processor to purée the peas until smooth and creamy. If it's too thick, add a little more milk.
Slice the onion thinly. Heat the olive oil in a skillet over medium heat and fry the onions until golden brown and crispy, about 8-10 minutes.
When serving, sprinkle the pea purée with the crispy fried onions, and drizzle with a little extra olive oil if desired.
