Thoroughly wash the peaches, halve them, remove the pits, and slice them into thin wedges. Tip: If the peaches are ripe, you can easily remove the pit with a teaspoon.
Pour the apple cider into a medium saucepan, add the honey, cinnamon stick, and cloves. Stir until the honey is dissolved.
Place the peach slices into the saucepan and heat the mixture over medium heat. Tip: Do not bring to a boil to preserve the fruity aroma and color of the peaches.
Add 2 tablespoons of freshly squeezed lemon juice to freshen the cider's flavor. Tip: Adding a little orange juice can make it even fruitier.
Stir well and let it stand for 5 minutes off the heat to allow the flavors to meld.
Before serving, strain the cider and garnish with fresh mint. You can also arrange the peach slices in glasses as decoration.
