In a bowl, combine the ground beef with salt and pepper. Form the mixture into four equally sized patties.
Heat olive oil in a skillet over medium-high heat. Cook the patties on both sides until golden brown and cooked through.
Toast the inside of the burger buns until lightly golden and crispy.
Spread an even layer of peanut butter on the inside of both halves of the toasted buns.
Thinly slice the tomatoes and red onion. Prepare the iceberg lettuce leaves.
Assemble the burgers: Place lettuce on the bottom bun, followed by a cooked patty. Layer with sliced tomatoes and red onion. Top with the other half of the bun.
