Cut the tofu into cubes, then place on a paper towel to remove excess moisture.
In a bowl, whisk together the peanut butter, soy sauce, grated ginger, minced garlic, lime juice, honey, sesame oil, and chili flakes until smooth.
Toss the tofu cubes in the glaze, and let it marinate for 20 minutes, allowing the flavors to meld.
In a skillet, heat a little sesame oil and bake the tofu, turning occasionally, until golden brown on all sides. This takes about 8-10 minutes.
Before serving, sprinkle the baked tofu with roasted peanuts and fresh cilantro. Serve with steamed rice or fresh vegetables.
