In a medium saucepan, pour in the apple cider, add the honey, cinnamon stick, and cloves. Stir until the honey is dissolved.
Place the pear slices in the saucepan and heat the mixture over medium heat. Tip: Do not bring to a boil, just heat until the aromas become intense.
Add 2 tablespoons of freshly squeezed lemon juice to balance the flavors. Tip: For a more intense flavor, you can also add a little orange juice.
Stir the cider well and let it steep for 5 minutes off the heat, allowing the flavors to meld.
Before serving, strain the cider and arrange the pear slices artfully in glasses. Garnish with fresh rosemary.
