Thoroughly coat the chicken pieces with the marinade, ensuring every side is covered. Let it marinate for at least 2 hours, or preferably overnight in the refrigerator.
Preheat your oven to 400°F (200°C), or prepare a grill for medium heat.
Place the chicken on a baking sheet lined with parchment paper and bake for 40-45 minutes, or until the skin is crispy and the meat is cooked through. If grilling, cook the chicken on both sides for 20-25 minutes, turning frequently.
Before serving, garnish with fresh cilantro and serve with roasted vegetables, salad, or steamed rice.
