Heat olive oil in a skillet over medium-high heat. Cook the patties on both sides until golden brown and cooked through.
Place a slice of mozzarella cheese on top of each patty in the skillet. Let the cheese melt.
Toast the insides of the burger buns until golden and crispy.
Assemble the burgers: place iceberg lettuce on the bottom bun, top with the cheesy patty, then layer with basil pesto, sun-dried tomatoes, and fresh tomato slices. Finish with the top bun.
