Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and bell pepper, and sauté for 5-7 minutes, or until softened.
Add the minced garlic and sauté for another minute, until fragrant.
Add the thinly sliced beef to the skillet and cook until browned and cooked through. Season with salt and pepper to taste.
Reduce the heat to low and place the cheddar cheese slices on top of the beef. Cover and let the cheese melt completely.
Halve the sandwich rolls and lightly toast the insides in a dry skillet or on a grill.
Place the cheesy beef mixture into the toasted rolls, dividing it evenly. Serve warm with a fresh salad or french fries.
