Slice the cheese into thin pieces so that it melts easily during grilling.
Warm the piadina in a skillet until it starts to brown lightly on both sides.
Place the cheese slices on one half of the piadina, then drizzle with a little honey.
Fold the other half of the piadina over the cheese to form a sandwich. Press down slightly to help the cheese stick together.
Continue grilling the piadina until the cheese melts and the piadina is crispy and golden brown.
Cut the finished piadina in half and sprinkle with fresh basil leaves, then season with salt and pepper to taste.
Serve immediately, so the cheese stays nice and gooey and the piadina remains crispy.
