Season the lamb with salt and pepper, then rub with olive oil. Peel and finely chop the garlic. Chop the rosemary as well.
Heat the olive oil in a skillet over medium-high heat. Sear the lamb on all sides until golden brown. Cook over medium heat for 10-15 minutes, then remove from heat and let rest for 5 minutes.
In a bowl, combine the yogurt with lemon juice, cumin, salt, and pepper to create the spiced yogurt.
Warm the piadina in a skillet for 1-2 minutes on each side, until slightly crispy.
Thinly slice the lamb and arrange it on the warm piadina. Spoon the spiced yogurt over the lamb.
Fold the piadina in half and serve immediately.
