Gently heat the apple cider in a medium saucepan over low heat.
Add the fresh pine buds, cinnamon stick, and lemon juice. Stir and let the flavors infuse for about 5 minutes.
Stir in the honey and vanilla extract, and mix well to combine.
Continue to heat the cider for another 2-3 minutes, allowing the flavors to meld further.
Strain the cider to remove the pine buds and cinnamon stick, then divide among glasses.
Before serving, garnish with whipped cream and a fresh rosemary sprig for an elegant presentation.
