Preheat your grill or a skillet to medium heat. Brush the pineapple slices with olive oil and grill for 2-3 minutes per side, or until slightly caramelized.
Prepare the vegetables: wash the lettuce leaves, and slice the tomatoes and red onion into thin rings.
Season the beef patties with salt and pepper on both sides. Cook them in a skillet or on the grill for 3-4 minutes per side, or until a golden-brown crust forms and they are cooked through.
When the patties are almost done, place a slice of cheddar cheese on each and cover to allow the cheese to melt.
Toast the hamburger buns in a skillet or on the grill until the inner surface is golden brown and crispy.
Assemble the burgers: spread BBQ sauce on the bottom bun, top with lettuce leaves, the cheesy beef patty, grilled pineapple, tomato and onion slices. Add more BBQ sauce to your liking.
Place the top bun on and gently press down. Serve immediately with fries or grilled vegetables.
