Add the diced pineapple to the saucepan and gently warm the cider over medium heat. Tip: Do not bring to a boil, to preserve the pineapple's aroma.
Stir in 2 tablespoons of freshly squeezed lemon juice to add a slight tartness that enhances the pineapple's sweetness.
Stir the cider thoroughly and let it steep for 5 minutes off the heat, allowing the flavors to meld together completely.
Before serving, strain the cider. Place the pineapple pieces in the glasses as a garnish and garnish with fresh mint.
