In a bowl, combine the olive oil, piri-piri sauce, salt, pepper, and garlic powder. Marinate the chicken breast fillets in this mixture and let it sit for 20 minutes.
Preheat a grill pan over medium-high heat. Grill the marinated chicken breasts for 3-4 minutes per side, until they are golden brown and cooked through. TIP: Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (75°C).
During the last minute of grilling, place the cheddar cheese slices on top of the chicken breasts and cover the pan to allow the cheese to melt nicely.
Toast the inside of the hamburger buns on the grill pan until crispy.
Prepare the vegetables: slice the tomato and red onion, and wash the iceberg lettuce leaves.
Assemble the burger: Spread piri-piri sauce on the bottom bun, then add lettuce, the cheesy chicken breast, tomato slices, and red onion. Top with the other half of the bun.
Serve hot with freshly cooked fries or sweet potato fries. TIP: Offer extra piri-piri sauce on the side for dipping.
