Prepare the dough: In a large bowl, sift the flour, add a pinch of salt, and create a well in the center. Crack in the eggs and gradually mix, then slowly add a little water until you get a pliable dough.
Knead the dough for at least 10 minutes until it becomes smooth and elastic. Then wrap it in plastic wrap and let it rest for 30 minutes.
Prepare the filling: Chop the pistachios, then mix them with mascarpone, powdered sugar, and vanilla extract. Finally, grate in the dark chocolate and mix thoroughly.
Roll out the dough thinly, then evenly spoon small portions of the filling onto one half, spaced evenly apart.
Fold the other half of the dough over, then cut out the ravioli with a ravioli cutter or knife. Press the edges firmly to prevent the filling from leaking out during cooking.
Bring a large pot of water to a boil, and lightly salt it. Drop in the ravioli and cook for 3-4 minutes, until they float to the surface.
Drain the ravioli, then melt the butter in a skillet and gently toss the pasta in it to lightly caramelize the outer layer.
When serving, sprinkle the ravioli with pistachios and grated chocolate. Serve warm!
