    Preparation Steps

    1

Grind the pistachios in a food processor until you get a paste-like consistency. If you like, you can add a little milk to make the mixture smoother.

    2

In a saucepan, combine the heavy cream, milk, and sugar. Heat over medium heat until the sugar is completely dissolved. Do not boil.

    3

In a separate bowl, whisk the egg yolks. Gradually whisk in a little of the warm milk mixture to temper the eggs.

    4

Pour the egg mixture back into the saucepan and cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon.

    5

Stir in the pistachio paste and vanilla extract. Mix well to ensure the paste is evenly distributed.

    6

Let the mixture cool completely to room temperature. Then, pour it into an ice cream maker and churn according to the manufacturer's instructions.

    7

If you don't have an ice cream maker, pour the mixture into a freezer-safe container and stir it every hour during freezing to prevent ice crystals from forming.

    8

Freeze for at least 4-5 hours, or until firm. Let it sit at room temperature for a few minutes before serving.
