In a large bowl, combine the flour, salt, and dry yeast. Add lukewarm water and extra virgin olive oil, then mix until a homogeneous dough forms.
Knead the dough for at least 10 minutes until it becomes elastic and smooth. Cover with a clean kitchen towel and let it rise in a warm place for 1 hour, or until doubled in size.
Preheat your oven to 480°F (250°C). If you have a pizza stone, place it in the oven to heat up. On a floured surface, roll out the dough into a circular shape.
Wash the figs and slice them thinly. Roughly chop the walnuts and toast them in a dry skillet for a few minutes to enhance their flavor.
Brush the dough with a little extra virgin olive oil, then sprinkle with freshly chopped rosemary.
Tear or slice the mozzarella and spread it over the dough. Crumble the Gorgonzola cheese on top, then arrange the fig slices.
Place the pizza in the preheated oven and bake for 7-10 minutes, or until the edges are golden brown and the cheese is melted and bubbly.
Once the pizza is ready, sprinkle with the toasted walnuts and drizzle with honey. Serve immediately!
