In a large bowl, combine the flour, salt, and dry yeast. Add the warm water and olive oil, then knead until you have a smooth and elastic dough. Cover and let it rise for 1 hour.
Roll out the risen dough into a thin, circular shape and place it on a baking sheet lined with parchment paper.
Spread the sour cream evenly over the dough, then sprinkle with grated mozzarella cheese.
Thinly slice the fresh porcini mushrooms and sauté them in a little olive oil with garlic and fresh thyme.
Place the sautéed porcini mushrooms on top of the pizza, then sprinkle with grated Parmesan cheese and a little freshly ground black pepper.
Bake in a preheated oven at 430°F (220°C) for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Garnish the pizza with fresh thyme leaves, slice, and serve immediately. Buon appetito!
