In a small bowl, combine the lukewarm water, yeast, and a pinch of sugar. Let it stand for 5-10 minutes, until foamy.
In another bowl, mix the flour and salt, then add the yeast mixture and olive oil.
Knead the dough for 5-7 minutes, until it becomes elastic and smooth. Cover it with a kitchen towel and let it rise in a warm place for 45 minutes.
Preheat the oven to 430°F (220°C) and line a baking sheet with parchment paper.
Roll out the risen dough thinly and place it on the prepared baking sheet.
Brush the dough with olive oil, then sprinkle with minced garlic and fresh rosemary.
Sprinkle with grated Parmesan cheese and crumble the mozzarella over the top.
Season with freshly ground black pepper, then bake the pizza for 12-15 minutes, until golden brown and the cheese is melted and bubbly.
Remove from the oven, let it rest for a few minutes, then slice and serve warm.
