Preheat your oven to 430°F (220°C). Prepare a pizza tray by lightly greasing it with olive oil.
Roll out the pizza dough to fit the size of your baking sheet, leaving the edges slightly thicker.
Rub the top of the dough with a halved garlic clove to infuse it with a subtle garlic flavour.
Arrange the fresh mozzarella slices on the dough and sprinkle with grated Parmesan cheese.
Drizzle the pizza with a little olive oil, then bake for 12-15 minutes, or until the cheese is melted and bubbly, and the crust is golden brown.
After baking, thinly slice the fresh truffle and place it on top of the pizza. If using truffle cream, spread a thin layer over the hot pizza.
Sprinkle the pizza with fresh thyme and drizzle with a touch of olive oil before serving.
