Arrange the mozzarella cheese over the tomato sauce, then top with the sautéed eggplant slices.
Sprinkle the pizza with grated Parmesan cheese and drizzle with a little olive oil.
Bake the pizza for 15-18 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Garnish with fresh basil leaves after baking and serve immediately.
