Combine the flour, salt, water, and olive oil. Knead until you have a smooth dough. Let it rest for 15 minutes.
Preheat the oven to 480°F (250°C) and line a baking sheet with parchment paper.
Roll out the dough very thinly and place it on the prepared baking sheet.
Spread the crème fraîche evenly over the dough, then distribute the thinly sliced onions and diced bacon.
Sprinkle with freshly ground black pepper. Bake for 10-12 minutes, or until the crust is crispy and golden brown.
Slice immediately and serve hot.
