In a large bowl, combine the flour, salt, and dry yeast. Add lukewarm water and extra virgin olive oil, then mix until the dough comes together and is homogeneous.
Knead the dough for at least 10 minutes until it is elastic and smooth. Cover with a clean kitchen towel and let it rise in a warm place for 1 hour, or until doubled in size.
Preheat the oven to 482°F (250°C), and if you have a pizza stone, place it inside to heat up. On a floured surface, roll out the risen dough into a circle.
Halve the cherry tomatoes and mix them in a small bowl with finely chopped garlic, olive oil, oregano, and freshly ground black pepper. Let it sit for a few minutes to allow the flavors to meld.
Brush the dough with a little extra virgin olive oil, then evenly spread the tomato mixture on top.
Sprinkle the pizza with grated Parmesan cheese, then tear or slice the mozzarella and place it on top.
Place the pizza in the preheated oven and bake for 7-10 minutes, or until the edges are golden brown and the mozzarella is nicely melted.
When the pizza is ready, sprinkle with fresh basil leaves and drizzle with a little extra virgin olive oil. Serve immediately!
