Prepare the pizza dough: combine the flour, water, yeast, and salt. Knead until smooth, then let it rise in a warm place for 1 hour.
Grill the chicken strips, seasoning them with the berbere spice blend. Slice the onion into thin slices.
Preheat your oven to 430°F (220°C), and prepare a baking sheet or pizza stone.
Roll out the dough thinly, then spread with tomato sauce. Sprinkle with mozzarella, and top with the grilled, spiced chicken strips and onion.
Bake the pizza for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
After baking, sprinkle with fresh cilantro and drizzle with olive oil. Serve immediately.
