In a large bowl, combine the flour, salt, and dry yeast. Add warm water and olive oil, then knead until you have a smooth, elastic dough. Cover and let rise for 1 hour.
While the dough is rising, prepare the topping. Slice the grilled beef (Nyama Choma) into thin strips.
Heat oil in a skillet, then sauté the finely chopped red onion and garlic. Add the sliced bell pepper and chili pepper, and sauté for 2-3 minutes.
Roll out the risen dough on a lightly floured surface, then place it on a baking sheet lined with parchment paper.
Spread a layer of tomato sauce over the dough, then evenly distribute the grilled meat mixture on top.
Sprinkle with grated mozzarella, then bake in a preheated oven at 430°F (220°C) for 12-15 minutes, until the cheese is melted and the crust is golden brown.
Before serving, sprinkle with fresh cilantro, then slice and serve immediately. Enjoy!
