Prepare the pizza dough: combine the flour, water, yeast, and salt. Knead until a smooth dough forms, then let it rise in a warm place for 1 hour.
While the dough is rising, brown the ground lamb in olive oil. Add the cinnamon, cumin, ginger, turmeric, and paprika. Chop the onion and add it to the lamb mixture.
Preheat the oven to 430°F (220°C) and prepare a baking sheet or pizza stone.
Roll out the dough thinly and place it on the baking sheet. Spread with tomato sauce, sprinkle with mozzarella, and top with the spiced lamb and onion mixture.
Bake the pizza for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
After baking, sprinkle with fresh cilantro and drizzle with olive oil.
