Preheat oven to 430°F (220°C). Line a baking sheet with parchment paper.
Peel and chop the tomatoes, then place them in a saucepan with the olive oil and minced garlic.
Cook the tomatoes over medium heat for 10-12 minutes, until you have a thick tomato sauce. Add the local spices and mix well.
In a separate skillet, brown the ground lamb in a little olive oil until cooked through.
Roll out the pizza dough and spread the tomato sauce evenly over it. Sprinkle with the prepared ground lamb.
Top with the grated mozzarella cheese and place the pizza in the oven. Bake for 12-15 minutes, or until the cheese is melted and golden brown.
Remove the pizza from the oven, sprinkle with fresh, chopped parsley, slice, and serve.
