Prepare the dough: Combine the flour, water, yeast, and salt in a bowl. Knead until smooth and let it rise in a warm place for 1 hour.
Slice the eggplant into thin rounds and grill them after brushing lightly with olive oil. Meanwhile, prepare the hard-boiled eggs and slice them.
Preheat your oven to 430°F (220°C) and prepare a baking sheet.
Roll out the dough into a circular shape and spread the tomato sauce evenly over it. Arrange the grilled eggplant slices on top of the sauce.
Place the sliced hard-boiled eggs among the eggplant slices, then drizzle with tahini sauce.
Bake the pizza for 12-15 minutes, or until the crust is golden brown and the toppings are heated through.
Before serving, sprinkle with fresh parsley, cumin, and paprika. Serve immediately.
