Preheat your oven to 430°F (220°C). Place the pizza dough on a baking sheet lined with parchment paper.
In a small bowl, season the sour cream with a pinch of salt and pepper. Spread evenly over the pizza dough.
Thinly slice the red onion. Clean the wild mushrooms and chop them into smaller pieces. Distribute the onions and mushrooms over the sour cream base.
Slice the game meat thinly or cut it into small cubes. Arrange the meat over the mushrooms.
Sprinkle the grated cheese evenly over the pizza and garnish with fresh thyme leaves.
Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and golden brown, and the crust is crisp.
Remove from the oven and let cool slightly before slicing and serving immediately.
