Preheat the oven to 430°F (220°C) and prepare a baking sheet with parchment paper.
Peel and chop the tomatoes, then place them in a saucepan with the olive oil and minced garlic.
Simmer the tomatoes over low heat for 10-15 minutes, until you get a thick sauce. Add the local spices and mix well.
Roll out the pizza dough onto the prepared baking sheet and spread the tomato sauce evenly over it.
Sprinkle the grated mozzarella cheese over the sauce and place the pizza in the oven. Bake for 12-15 minutes, or until the cheese is melted and golden brown.
Remove the pizza from the oven, sprinkle with chopped fresh cilantro, then slice and serve.
