In a large bowl, combine the flour, salt, and dry yeast. Add warm water and olive oil, then knead until you have a pliable dough. Cover and let rise for 1 hour.
While the dough is rising, in a small bowl, mix the zaatar spice mix with a few tablespoons of olive oil to form a paste.
Roll out the risen dough into a thin, circular shape. Place it on a baking sheet lined with parchment paper.
Spread the zaatar paste evenly over the dough, then sprinkle with grated mozzarella and crumbled feta cheese.
Sprinkle with sesame seeds and place in a preheated oven.
Bake in a preheated oven at 430°F (220°C) for 10-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Remove the pizza from the oven, sprinkle with chopped fresh parsley, and serve with fresh lemon wedges. Enjoy!
