In a large bowl, combine the ground beef and ground pork. It's important that the meat isn't too lean, so choose moderately fatty cuts.
Finely chop the onion and garlic. Add them to the meat mixture.
Season the mixture with salt, pepper, and paprika. Mix the ingredients thoroughly to ensure the spices are evenly distributed.
Add the sparkling water, which helps to tenderize the meat and makes the patties softer. Mix well.
Shape the mixture into large, flat patties (about 1-2 cm thick). Lightly oil your hands to prevent the meat from sticking.
Heat a skillet or grill to medium-high heat, then brush with a little oil. Cook the patties for 4-5 minutes per side, until golden brown and crispy on the outside and cooked through on the inside.
Serve fresh, traditionally with Lepinja bread (flatbread), red onion, and Ajvar (Serbian roasted red pepper relish).
