Thoroughly wash the plums, then halve them and remove the pits. Slice thinly.
Split the vanilla bean lengthwise and scrape out the seeds with the tip of a knife. Use both the whole bean and the seeds.
Place the plum slices and vanilla (bean and seeds) in the bottom of a large pitcher. Gently muddle the plums with a wooden spoon to release their juices.
Add the honey and lemon juice, then stir well until the honey is dissolved.
Pour in the apple juice and let it sit for 10-15 minutes to allow the flavors to meld.
Fill the pitcher with ice cubes, then top with sparkling water. Stir gently to preserve the carbonation.
Serve the cider in chilled glasses, garnished with plum slices and a small piece of vanilla bean.
