Wash the plums, halve them, and remove the pits.
In a saucepan, bring the water to a boil with the sugar, cinnamon stick, cloves, and lemon zest.
Add the plums and cook over medium heat for 10-15 minutes, or until the plums are tender.
Remove from heat and let it cool. You can store it in the refrigerator before serving.
