Prepare the pomegranate: halve it and carefully scoop out the seeds. Tip: Do this over a bowl of water to avoid splattering.
In a medium saucepan, pour in the apple cider, add the honey, cinnamon stick, and cloves. Stir until the honey dissolves.
Add the pomegranate seeds to the saucepan and heat over medium heat. Tip: Do not boil, to preserve the beautiful color of the pomegranate.
Add 2 tablespoons of freshly squeezed lemon juice, which will give the drink a refreshing and slightly tart flavor.
Stir well and let it sit for 5 minutes off the heat, allowing the flavors to meld.
Before serving, strain the cider and arrange the pomegranate seeds in the glasses as a decoration. Garnish with fresh mint.
