Ponchiki – Russian donuts with powdered sugar

Ponchiki

Ponchiki is one of the most well-known desserts in Russian and Eastern European cuisine, popular for centuries. These light doughnuts, soft on the inside and crispy on the outside, are the perfect choice for a cold winter afternoon or a quick sweet treat. The dough is often enriched with sour cream to make it even softer, and they are traditionally sprinkled with powdered sugar. If you want to vary it, you can experiment with jam or chocolate fillings!

    Preparation Steps

    1

In a medium bowl, whisk together the flour, sugar, baking powder, and a pinch of salt.

    2

In a separate bowl, whisk the eggs, then add the sour cream and vanilla extract. Mix until smooth.

    3

Pour the wet ingredients into the dry ingredients and mix until you have a soft but manageable dough.

    4

Heat the oil in a deep skillet over medium heat until it reaches approximately 340-350°F (170-180°C).

    5

Using a spoon, form small balls of dough and carefully drop them into the hot oil. Do not overcrowd the skillet.

    6

Fry the doughnuts until golden brown, about 3-4 minutes, turning occasionally to ensure even cooking.

    7

Remove the fried ponchiki and place them on a paper towel-lined plate to drain excess oil.

    8

While still warm, sprinkle generously with powdered sugar and serve immediately!
