Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a bowl, combine the ground poppy seeds, ground walnuts, sugar, vanilla sugar, and lemon zest.
Add milk to the mixture, stirring until you get a creamy consistency.
Lay out the strudel dough sheets on a clean kitchen towel and brush them with melted butter using a pastry brush.
Evenly spread the poppy seed and walnut filling along the longer side of the dough, then tightly roll it up.
Place the rolled strudels on the prepared baking sheet and brush them with the remaining melted butter.
Bake the strudels for 25-30 minutes, or until golden brown.
Let the strudels cool slightly before dusting with powdered sugar and serving.
