Pork and Rice Stew is a true family favorite, combining the traditions of Hungarian cuisine with the rich flavors of rice and meat. The dish is based on a classic pörkölt (stew) base, complemented by rice and spices. The rice perfectly absorbs the juices of the meat, making every bite a truly mouthwatering experience.
Various meats can be chosen to prepare pork and rice stew, but pork is most commonly used. The rich, spicy pörkölt is first allowed to tenderize the meat, and then, by mixing in the rice, we get a dish that is satisfying and nourishing for the whole family.
Cut the pork into small cubes, season with salt and pepper.
Heat the oil in a large pot or Dutch oven over medium heat. Sauté the finely chopped onion and garlic until softened.
Add the pork and brown on all sides. Sprinkle with Hungarian sweet paprika and stir well to coat.
Add the diced bell pepper and tomatoes, along with the bay leaves. Cook for a few minutes, stirring occasionally.
Pour in the water or broth, cover, and simmer over medium heat for 30-40 minutes, or until the pork is tender.
Meanwhile, cook the rice in salted boiling water according to package directions, then drain.
Once the pork is tender, stir in the cooked rice. Cook for a few more minutes to allow the flavors to meld.
Serve hot, with a fresh salad or pickles on the side.
