In a large bowl, combine the ground pork, breadcrumbs, egg, smoked paprika, garlic powder, salt, and pepper. Mix thoroughly until well combined.
Form the mixture into four equal-sized patties. Place them on a plate and let them rest for 10 minutes.
Heat a skillet or grill to medium-high heat. Brush both sides of the patties with a little olive oil. Cook for 4-5 minutes per side, or until golden brown and cooked through.
During the last minute of cooking, place a slice of cheddar cheese on top of each patty. Cover the skillet or grill to allow the cheese to melt.
Meanwhile, halve the brioche hamburger buns and toast them in a dry skillet or brushed with a little olive oil until golden brown.
Prepare the vegetables: slice the tomato and red onion into thin rings.
Spread a little BBQ sauce and mayonnaise on the cut sides of the toasted buns.
Assemble the burgers: place a lettuce leaf on the bottom bun, followed by the cheeseburger patty, tomato slices, and red onion rings. Top with the other half of the bun.
Serve immediately, preferably with fries or a fresh salad. Tip: For an even smokier flavor, use smoked cheddar cheese for the burgers!
