Heat the olive oil in a skillet over medium-high heat until shimmering.
Place the pork collar slices in the skillet and sear on both sides until golden brown (about 3-4 minutes per side).
Add the butter, crushed garlic cloves, and rosemary to the skillet. Spoon the herb butter over the meat during the last few minutes of cooking.
Once the meat is cooked through, transfer it to a plate and cover with foil. Let it rest for 5-10 minutes before serving.
Serve the pork collar steak with a fresh salad, roasted potatoes, or steamed vegetables.
